Tetrazzini recipe

Chicken Tetrazzini
 
  • 4 cups Chicken, Cooked
  • 8 ounces Pasta, Cooked and drained
  • 6 tablespoons Butter
  • 8 ounces Mushrooms, Sliced
  • .25 cup Flour
  • 1.25 cups Half-and-half
  • 2 cups Chicken broth
  • .25 cup Dry sherry
  • .5 cup Parmesan cheese
  • Paprika
  • Salt
  • Pepper
 
Servings/Yield: 8 servings

For vegetarian substitute chicken with meatless chicken product and broth with vegetable stock.

Preheat oven to 425 degrees.
Cook Spaghetti or noodles according to package directions. In skillet melt 2 tablespoons of butter over medium-low heat. Saute' sliced mushrooms until golden. In a saucepan, melt remaining butter, then stir in flour with .5 teaspoon of salt. Stir until smooth, then add broth and cream. Cook while stirring until sauce is thickened. Add chicken (or turkey or meatless product) along with cooked mushrooms and sherry. Heat through. Place noodles or spaghetti in a buttered baking dish, and pour sauce over them. Top with Parmesan cheese and sprinkle with paprika.
Bake at 425 for 15 to 20 minutes, until hot and bubbly.

Mitzi's Layered Cornbread Salad

Layered Cornbread Salad
 
  • 1.5 cups Mayonnaise
  • 1.5 cups Dill Pickle Juice
  • 1 recipe Cornbread, Cooked, cooled and crumbled
  • 1 can Pinto Beans, Drained
  • 1 cup Green Pepper, Diced
  • 1 cup Green Onion, Diced
  • 1 cup Tomato, Diced
  • 1 lb. Bacon, Fried and Crumbled
 
Servings/Yield: 12 servings

Difficulty: 
For vegetarian option, use equal portion of meat free bacon product.

Mix mayonnaise and pickle juice, and set aside.
In a 9x13 baking dish, layer remaining above ingredients in the order presented.
Cover layered ingredients with dressing made in first step, and chill for 4 hours or over night.

Mitzi's Cheesy Bread Recipe

Here you go!  I will be posting the recipe's from the shows so that you are able to view or print them out.


Mitzi's Famous Cheesy Bread
 
  • 1 cube Butter, Softened
  • ½ cup Mayonnaise
  • 1 cup Italian blend cheese, shredded
  • 1 cup Sharp cheddar cheese, shredded
  •  cup Parmesan cheese, grated
  • 2 teaspoons Italian seasoning
  • 2 heaping teaspoons Garlic, crushed
  • 1 loaf Artisan bread, any good bread you like
 
Servings/Yield: Servings: --
Rating: 
Mix toppings together in medium bowl. Stir with a wooden spoon until all ingredients are evenly distributed. Cut in half from the side, so that you have a top and bottom portion. Spread topping mixture evenly over top of both halves.

Place on center rack under broiler on low setting. until cheese is bubbly and gooey. Watch that you do not burn.
